I love anything oatmeal and chocolate chip! The added almond flour in this recipe gives it a nice flavour while keeping the cookie chewy and delicious. Perfect for those who are gluten free if you use gluten free oats. Enjoy!
1/2 cup butter, softened
1/2-3/4 cup dark brown sugar
1 tsp vanilla extract
2 1/2 cups almond flour
3/4 cup rolled oats
1 tsp baking soda
1/2 tsp sea salt (plus a bit for sprinkling on top)
3/4 cup chocolate chips of choice.
Preheat oven to 180C / 350F
Line a baking sheet with parchment paper.
In a medium sized bowl, mix the wet ingredients together with a whisk until creamy.
In a large bowl mix together the dry ingredients (other than the chocolate chips)
Add the wet mix to the dry mix and stir to combine. Fold in the chocolate chips.
Drop about a heaped Tbsp of mixture at a time onto the baking sheet, make sure to leave some space in between as they will spread somewhat.
Bake for about 10-12 minutes until just starting to brown. Remove from the oven and allow to cool a bit before placing on a baking rack.
