It's apple season in New Zealand and this apple crisp recipe will be a winner for breakfast or dessert!
6-10 cooking apples, depending on the size.
1/2 tsp cinnamon
1 tsp vanilla
1 cup of almond meal (you can also sub in 1/2 cup rolled oats if you'd like)
1/2 cup mixed nuts of choice, or use some Apple Crumble High Protein Breakfast Cereal like I've been doing lately.
Another 1/2 tsp cinnamon
1 Tbsp chia seeds
1/4 tsp sea salt
1-2 Tbsps sweetener of choice*
1/3 cup softened butter (or coconut oil for dairy free)
Preheat oven to 180C/350F
Cut and peel the apples and put into a pot with a little bit of water (just enough so it doesn't stick) and the first quantity of cinnamon and the vanilla. Simmer the apples over medium heat until quite soft.
Meanwhile, mix together the almond meal, oats if using, HPB cereal (or nuts &seeds), sea salt, cinnamon, butter and vanilla extract (use your hands it's much easier!)
Pour the apples into a square baking dish, Top with the nut mixture (crumble as you scatter over the top).
Bake in the oven for about 30 minutes, or until the top has browned and the apples are bubbling.
Serve with coconut cream, coconut yogurt, Greek Yoghurt, custard or whipped cream!
*You can use any sweetener you'd like. Xylitol or Erythritol for a sugar replacement. Honey or Maple syrup, or simply regular ol' cane sugar if you'd like.
