Mediterranean Three Bean Salad

Beans are SO good for you! I'd actually forgotten how much I love them until recently having some bean salad in the Air New Zealand lounge. From then on, I've been craving my own three bean salad and so here's the recipe for all of YOU.




Salad ingredients:


1 can cannelloni beans, rinsed and drained

1 can chickpeas, rinsed and drained

1 can kidney beans, rinsed and drained

1 red onion, chopped

1 red capsicum, chopped

1/2 cucumber chopped

2 Tbsp capers, chopped

1-2 roasted red peppers, chopped (optional)

1 handful of fresh parsley leaves, chopped

1 handful of fresh basil, torn into small pieces

1 handful of fresh mint, torn into small pieces


Vinaigrette:


2 cloves of garlic, finely chopped

1/4 cup cold pressed olive oil

1 tsp Dijon mustard

2 Tbsp red or white wine vinegar

2 Tbsp lemon juice

1 tsp runny honey

salt and pepper to taste


Directions:


Mix all the salad ingredients together in a large bowl.

Place the dressing ingredients together in a small jar and shake shake shake!

Add the dressing to the salad ingredients and stir to combine.

Allow to sit for at least 30 minutes or so (stirring occasionally) before serving.
