These 'bikkies' (aka cookies) are a great way to fuel your morning if breakfast is a bit of an afterthought. Bring them to work or have them with your morning cuppa. They are filling, nourishing and delicious.

Ingredients:
1 cup rolled oats
1 cup spelt flour (or flour of choice - any will do)
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/4 cup shredded coconut
2 Tbsp chia seeds or linseeds
1/4-1/2 cup granulated sugar of choice
1 tsp cinnamon
1 tsp salt
1 cup dark chocolate chips (or a chopped up dark chocolate bar)
1/2 cup raisins
2 Tbsp water
2 Tbsp blackstrap molasses
6 Tbsp light tasting olive oil, or sunflower oil
1/2 cup almond milk (or any milk really)
Directions:
Preheat the oven to 180c
In a large bowl, combine the dry ingredients - everything from oats to raisins. In a separate bowl combine the wet ingredients. Add the wet ingredients to the dry ingredients and stir until just combined. No need to over mix!
Using a 1/3 cup measuring cup - scoop up the bikkie mix and place onto a baking paper lined baking tray a few cm apart. This will make about 8 very large bikkies or 16 smaller ones if you prefer.
Bake for about 15-20 minutes or until just golden. Enjoy!
