There may be many reasons why someone might choose a low carb bread. Ultimately, it's their choice what they want to do! That being said, there is nothing worse than a bread alternative that tastes nothing like bread. You feel restricted, you are over it, and well, there's just no fun in that. On the other hand, these bread rolls are as close to the real thing as any lower carb bread I've every tried, and super easy to make! There are lots of variations of this recipe out there but this one works for me. Enjoy!
200g almond meal (or almond flour)
30g psyllium husk
2 tsp baking powder
1 tsp sea salt
3 egg whites (save the yolks for your hollandaise sauce ;)
30ml apple cider vinegar
1 cup boiled water
Boil your water and set aside.
Separate your eggs and set aside.
Turn the oven on to 180c
Mix the dry ingredients together in a large bowl.
Add the egg whites and vinegar and stir to combine.
Add the boiled water and whisk with all your might for about 30 seconds so that there are no lumps. Alternatively you could use a hand mixer.
The mixture will resemble play doh - you can now shape it into 5 fist sized bread rolls. Place onto a baking paper lined oven tray and flatten just a tiny bit. Sprinkle with sesame seeds if you'd like.
Bake for about 50 - 60 minutes, remove from the oven and allow to cool before eating.
