Sweet potato, or kumara as we call it here is a delicious alternative to standard potatoes adding flavour and a variety of nutrients to your dinner plate. Load them up and enjoy!
This really is a 'thrown together' type recipe but so warm and comforting on these cold nights.
All I did was take a few servings of kumara (depending on how many of you are eating!) and cut them into thin sticks (about 1.5 cm).
Toss the kumara with olive oil, avocado oil, coconut oil or duck fat and sprinkle with turmeric, sweet paprika, chopped cashews and grated cheese of choice (I used Dutch Goat from Bin Inn Waitara). Cook in the oven until cooked and crispy (about 20 min)
Top with fresh chives, parsley, thyme, cracked pepper and a few dollops of homemade mayonnaise.
