Veggie Burgers

Those of you who have been following me for a while may or may not know that I was a vegetarian for almost 27 years! During that time I had to get creative with my recipes as it wasn't as simple as frying up a steak! These burgers are easy to make and tasty with dollops of avocado, vegan aioli and sweet potato (kumara).

Ingredients:

2 cans cooked black beans, drained and rinsed

1 cup spinach or your favourite green (steamed)

1 carrot- very finely chopped

1/2 onion finely chopped

1 bunch dried chives

1/2 cup miso soup liquid or vegetable broth

1 tsp dried basil

1 Tbsp dried oregano

Sea salt and pepper to taste

1/2 cup cooked rice

Directions:

Mash your beans well and simply combine with all the other ingredients in a bowl. Shape into patties and bake in the oven for 30 minutes at 200C. Serve your burger on your favourite salad mix and top with avocado and/or your favourite toppings.
