These are the easiest and most versatile truffle you could possibly make. Add orange zest, or candied ginger or peppermint extract for an added treat.
2 cups walnuts
2 cups dried dates
8 Tbsp Cacao Powder (Click HERE to see my favourite)
In a food processor process the walnuts until you have a very fine crumb. Add the dates and cacao and continue to process until the mixture starts to stick together.
Roll into balls and then roll in coconut, or freeze dried fruit powder, or more cacao.
Alternatively, you could press the mixture into a square pan, top with your favourite raw icing and cut into brownies.
