Carrot Cake Protein Cookies

These tasted just like the real thing. Feel free to add sultanas or other dried fruit but I didn't feel it needed it.

Ingredients:

3 Tbsp almond butter

2 scoops (25g) Vanilla Clean Lean Protein*

1/2 carrot finely grated

1 egg

1 tsp cinnamon

1/2 tsp ginger

1 tsp maple syrup

Directions:

Preheat oven to 180C

Mix all the ingredients together and use wet hands to shape into 8 small balls. Sprinkle with coconut or chia seeds and use a fork to flatten slightly. Bake for about 15 minutes or until just starting to brown.
