Chocolate Self Saucing Pudding


Looking for something decadent and easy to make? This pudding is for you!

INGREDIENTS 2 tablespoon Cocoa or Cacao

2 tablespoons sweetener 2 pasture-raised eggs 1/2 teaspoon baking powder 1 teaspoon vanilla extract 2 tablespoon coconut cream

DIRECTIONS * For the sweetener I used a fine Xylitol. You could also use coconut sugar, or raw sugar or even rice syrup (just add it with the wet ingredients).

Preheat the oven to 180C/350F

Whisk the cacao and sugar together until there are no lumps. Add the baking powder and continue to mix.

In a separate bowl, whisk the eggs until very frothy (Or stick in a nutri-bullet like I did).

Add the rest of the wet ingredients to the eggs. (For dairy free, use coconut cream)

Combine the two mixtures and pour into two greased mugs or ramekins.

Cook for no more than 10-15 minutes. It should be cooked on top but still running in the middle.

Serve with coconut yogurt, cream or your favourite topping.
