Nutty Apple Crisp

It's apple season in New Zealand and this apple crisp recipe will be a winner for breakfast or dessert!


6-10 apples, depending on the size.

1/2 tsp cinnamon

1 tsp vanilla

1 cup of almond meal or flour

1/2 cup mixed nuts of choice (I used hazelnuts, almonds and walnuts)

1 more tsp cinnamon

1 Tbsp chia seeds

1/4 tsp sea salt

1-2 Tbsps sweetener of choice*

1/3 cup butter (or coconut oil for dairy free)


Preheat oven to 180C/350F

Cut and peel the apples and put into a pot with a little bit of water (just enough so it doesn't stick) and the first quantity of cinnamon and the vanilla. Boil the apples over medium heat until quite soft.

Meanwhile, mix together the almond meal, nuts, seeds, sea salt, cinnamon, butter and vanilla extract (use your hands it's much easier!).

Pour the apples into a square baking dish, Top with the nut mixture (crumble as you scatter over the top).

Bake in the oven for about 30 minutes, or until the top has browned and the apples are bubbling.

Serve with coconut cream, coconut yogurt or Greek yogurt.

*You can use any sweetener you'd like. Xylitol or Erythritol for low carb. Honey or Maple syrup, or simply cane sugar if you'd like.
