Stevia Sweetened Salted Caramel Chia Pudding

Phew! That title is a mouthful! And so is this chia seed pudding! If you're into salted caramel and you're into chia pudding this is a match made in heaven. For those who have concerns about the amount of sugars they consume, this one has zero. It's sweetened naturally with stevia. You kinda do need to use the caramel flavoured one, as otherwise it wouldn't be a salted caramel treat.

For the pudding:

1.5 cups your favourite milk (I used almond milk)

1/4 cup chia seeds (white or black)

Caramel flavoured Stevia to taste. I started with 4 drops and then added one drop at a time to reach desired sweetness.

Add all the ingredients to a jar or bowl and shake or stir periodically until the chia seeds reach their full plumpness. (3 hours - overnight)

For the caramel sauce:

2 Tbsp of your favourite peanut butter

1 Tbsp melted coconut oil (or MCT oil - don't worry, it's not poison)

4 drops caramel stevia (or to taste)

Stir well and drizzle over the chia pudding.

I layered mine with Good Boost Co. Almond milk yogurt and the caramel sauce and topped with some cashews (I wanted roasted peanuts but was all out!).

Have fun with it, use your favourite yogurt or nutty topping and enjoy! I had mine 4 hours ago and am still not hungry!
