Lunchbox Bars

These were very yummy - but a bit too sweet for my tastebuds! Perfect for hubbies and kiddies. Make a bunch and you're set for a good couple of weeks.


1 1/2 cups rolled oats

1 1/4 cup crisp rice cereal

1/2 cup sunflower seeds

1/4 cup desiccated coconut

1 tsp cinnamon

A pinch of sea salt

1/2 cup honey, rice syrup or maple syrup

1/4 cup macadamia butter (or any nut or seed butter)

1 tsp vanilla extract

1/4 cup white chocolate chips (or dark chocolate chips)

1/4 cup dried cherries (or another dried fruit)


Line a square baking dish with baking paper.

Mix all the dry ingredients together in a large bowl.

Gently heat the syrup and nut butter together over medium heat. Bring to a simmer and simmer for about 30 seconds or so, stirring constantly.

Remove from the heat and add vanilla extract. Combine this with the dry ingredients and then press into the square baking dish.

Place in the fridge to harden and then slice into 12 bars. Store in the fridge or freezer.
