Red Magic Soup

This hearty winter soup even had my husband whistling tunes. Perfect on a cold rainy night!


2 red onions, diced.

1/2 red cabbage, diced

3 beetroot, peeled and diced

3 cups of your favourite marinara sauce

5 cups vegetable stock (or beef broth)

sea salt to taste

Optional toppings:

Crispy bacon

Cashew Cream / Sour Cream / Greek yogurt

Chives or Dill


Heat a little bit of olive oil in a large soup pot.

Saute the onions for a couple minutes until translucent

Add the beetroot and cabbage and cook for another couple minutes.

Add the stock and marinara sauce and simmer for about an hour and a half to two hours, or until the beetroot is soft. Add sea salt and pepper to taste.

Place in bowls and top with your choice of toppings or nothing at all.
