Berry-Ripe Bites


Looking for something sweet and delicious with your afternoon tea? These tasty bites and loaded with brain boosting fats and antioxidants (from both berries AND chocolate!). What's not to love?


Ingredients:

2 cups desiccated or shredded coconut

1 cup frozen berries (no need to thaw)

1-2 Tbsp raw honey (or sweetener of choice)

1/4 cup coconut oil

1 bar of Green and Blacks 85% Dark Chocolate

Instructions:

Line a square baking pan with baking paper for easy removal.

Process the coconut in a food processor until fine. Add the frozen berries and process until combined.

Place the mixture in a small sauce pan with the coconut and honey and gently warm over low heat until the coconut oil is melted and ingredients are combined.

Press the mixture into the baking paper lined pan and place in the fridge to harden.

Once hardened enough, remove from the fridge and cut into 16 squares.

Place in the freezer for a further 20 minutes or so.

While your squares harden, melt the dark chocolate gently in a double boiler or something similar.

Remove the squares from the freezer and dip, one at a time, into the melted chocolate and place on a baking paper lined tray. Alternatively, you can simply drizzle the chocolate over the raw bars.
