Everything Muesli Bar


I call this recipe my "everything" muesli bar because you can pretty much whip it up with everything and anything!


You can use any variety of nuts and seeds, different types of nut butters, whatever dried fruits or if you're pressed for time, you can simply use a bag of pre-made granola or cereal like I did yesterday!

Here's the basic recipe:

Everything Muesli Bar:

Dry Ingredients

  • 1 3/4 cups of mixed nuts or seeds (any variety you like). Or, just use your favourite cereal or muesli.

  • 1/4 cup desiccated coconut or more mixed seeds/nuts. You could also add some oats if you're into that.

  • 1 tsp cinnamon or your favourite spices

  • A pinch of sea salt.

  • 1/3 cup freeze-dried blueberries or other types of dried fruit (optional)

Wet Ingredients

  • 1/3 cup coconut oil, melted

  • 1/3 cup nut or seed butter of choice (peanut butter is yum!)

  • 1 Tbsp honey, maple syrup or rice syrup (whatever you've got in the house) or simply omit!

Combine the dry ingredients in a large bowl.

Combine the wet ingredients in a separate bowl until smooth (you may need to do this in a saucepan over low heat).

Combine the dry ingredients with the wet ingredients and press into a baking paper lined, square baking dish.

Place in the fridge to harden and then cut into bars.

Yesterday I made these muesli bars with HelloRaw raw granola. The banana flavour with a few extra cashews thrown in was really yummy!
