Low Carb Lemon Goji Balls
1 1/2 cups Cashews
1 1/2 cups Shredded Coconut
1 lemon zested
1 1/2 lemons juiced
2 teaspoon Honey
1 teaspoon vanilla extract
1 tablespoon Coconut oil, melted
1 scoop Nuzest Clean Lean Protein
1/2 cup goji berries
Process the cashews and coconut in a food processor until they are a fairly fine consistency.
Add the lemon zest, juice, honey, protein powder (if using), vanilla and coconut oil and pulse until the mixture starts to come together. Add the goji berries last and pulse a couple times to combine.
Take small handfuls and shape into balls. Roll each ball in desiccated coconut (and a bit of added lemon zest if wanted). Store in the fridge and enjoy!
