Chocolate Orange Cake



Ingredients 2 Oranges 2 cups Almond flour 5 tablespoon Cocoa 4 tablespoon maple syrup 1 teaspoon vanilla extract 1 teaspoon baking soda 1 bar 90% dark chocolate, finely chopped. 5 Eggs

Instructions Cover the oranges with water in a large pot and boil for about an hour. Drain the water and then cut the oranges into quarters and allow to cool.

Set the oven to 180C

Place the whole oranges in a food processor or blender and blend until pulpy. Add the remaining ingredients (except for the dark chocolate) and blend until smooth. Fold in the dark chocolate and then pour into a greased cake pan.

Bake for about 40-50 minutes or until an inserted toothpick comes out clean. Allow the cake to cool completely then remove from the cake pan. Dust with cocoa powder, or raw cacao for an extra nutrient boost.

Serve with cream or your favourite plan yogurt.
